Romaine
Refreshingly crisp as a base in everyday salads and sturdy enough to hold up to heat for grilling or sautéeing—romaine is one of the most versatile types of lettuce. The long green leaves are widely desired for their ability to stay crunchy in a salad without wilting.
Red Coral
Red Coral lettuce has a bold flavor, that’s slightly bitter and nutty, with dramatically ruffled, satisfyingly crisp, semi-succulent leaves. The compact heads are bright green at the base and deepen to a rich red color at the top. Red Corel is often referred to as red coral due to its resemblance to corals of the marine ecosystems.
Red Oak
Red Oak is known for its incredibly sweet and mellow flavor, nutty with a buttery texture-and how beautiful it looks on the plate. Lettuce leaves are burgundy-red stained, elongated, lobed and loosely serrated, similar to the leaves of an oak tree. They form semi-tight rosettes at the core.
Green Oak
Green Oak grows in an elongated rosette shape, is narrow and small at the base, fanning out to a wide curly loose top. The edge of the leaves are a deep green and the inner is much lighter in colour. Green Oak lettuce is firm and crisp. The leaves have a mild sweet and nutty flavor.
Green Coral
Green Coral has tight curly leaves, are produced loosely in a whole head, and is tender in taste, with a slight bitterness. This very decorative lettuce types add a punch of colour, texture and volume to salads. The curled leaves also have a practical function as they increase the surface area enabling salad dressings to be caught up in the leaf and not to the bottom of your salad bowl. Bionda is often referred to as green coral due to its resemblance to corals of the marine ecosystems.
Frillice
Frillice lettuce is a cross breed between iceberg lettuce and curly endive. The breed produced leaves that are thick and green as those of the iceberg and tops that look like the curly endive in crinkles. Frillice is sometimes described as a curly Iceberg due to the looks.
